Hyphy’s San Francisco Cuisine Meets Manila

Restaurants have opened in the veranda area of Robinson’s Galleria and one restaurant is easily set apart with its introduction of new dishes found almost nowhere else in Manila.  A visit to Hyphy’s a couple of weeks ago showed me diversity in the menu –an attempt to introduce San Francisco favorites and spinning a soul of Manila in them.

One thing about fusion of cuisines is… it can definitely get mixed responses as well –mostly from purists of each cuisine.  Those who appreciate the dish when it’s closest to its original form and taste look for its familiarity and get somehow disappointed when they’re faced with nearly a stranger.  For some, they welcome the refreshing take on an old favorite and taste the dishes completely with open mind and taste buds.

Papa John’s Pizza in Manila

 

 

Last Thursday, Richard, Irene, Bubba and I set out for lunch and decided to check out the newly opened Papa John’s Pizza located at Robinson’s Galleria recently opened Veranda section.

 

Papa John’s Pizza is a US-based pizza chain serving meals featuring mainly pizza, pasta and soup.  It supposedly owns or franchises approximately 3,200 restaurants worldwide that makes Papa John’s Pizza a well established International franchise restaurant chain from USA and the 3rd largest pizza company in the world.

 

 

Now it has come to Manila and is part of its 171 restaurants in Asia.  The first branch in Galleria can probably sit 40-50 people but the tables are too close to each other for comfort.  I would have preferred better spacing in terms of the chairs and tables so there’s more room to move around.

 

 

Papa John’s pizza chain believes that it’s better to make a pizza using fresh dough and superior quality ingredients than just focusing on cooking technique while in the kitchen.  Thus it’s tagline, “Better Ingredients.  Better Pizza.”

Potato Wedges PHP 90

The Potato wedges were not seasoned well but Bubba and I finished it anyway while waiting for our food to arrive. 

 

 

Chicken and Mushroom Calzone PHP 160

Irene spotted this and it was pretty good.  Calzones are like Italian turnovers or pizzas folded together in a crescent-shape.  This hot-off-the-oven calzone is stuffed with mushroom and chicken and served with fresh marinara sauce on the side.  Its dough is soft and chewy and cooked evenly.

The chicken wings were surprisingly and delightfully juicy.  I found the price expensive though for 4 actual pieces (total of 2 whole wings only) of plump wings.

 

 

Baked Italian Meatballs PHP 140

When the plate arrived on our table, our foursome gave each other a look.  The meatballs looked so tiny amidst its serving plate.  However, I really liked the bright colors of red from the tomatoes, yellow from the mozzarella cheese and brown from the meatballs displayed on the plate which produced an appetizing presentation of colors.

 

 

The meatballs, although small and can be eaten almost in one bite, are packed with flavor and I love the clean taste of the grounded meat against the refreshing sauce it is doused in.

 

 

Super Papa’s Pizza Medium 12” PHP 440

It was safe to order Super Papa’s since that was our first time and we wanted to try their “house specialty” (in other words, we were so hungry that menu was only quickly perused.)  Super Papa’s Pizza had pepperoni, Italian sausage, chicken, olives, and bell peppers.  They served whole Pepperoncini and garlic butter sauce on the side to add flavor.    

 

 

Pepperoncini (Italian pepper) tastes mild with a slight heat and a hint of sweetness since it is usually pickled.

 

What I particularly liked about Papa John’s pizza is the chewy dough.  The chewy dough was really soft and had this distinct flavor about them.  I wonder how the reheat quality of Papa John’s Pizza is once you have leftovers.  I hope it still stays as chewy as it is when it’s fresh out of the oven.  It wasn’t a big worry since we didn’t have any leftovers.

 

 

The story behind Papa John is that owner John H. Schmatter at age 22 tore down the broom closet in his father’s tavern, sold his car and bought $1,600 worth of used restaurant equipment, and began delivering pizzas out of the back of the bar. 

 

 

In 1984, Papa John officially opened its first pizza restaurant.  Fast forward to 2010, you can actually have a taste of the famous US pizza brand in the Philippines.  

 

 

 

Not that it has anything to do with the restaurant but I just want to say that I love the name.  “Papa John” just strikes a warm place in my heart.

Excitingly Spiced at Nasi Lemak

One Sunday afternoon, food aficionados gather at a recently-opened branch of Nasi Lemak at Robinsons Galleria.  We all met HK Tan, proprietor of Nasi Lemak and quite the gourmand, traveler and photographer himself.  His passion for food’s excellence shows as he opens our afternoon delights with a step by step leveling of flavor.

Malaysian Sambal Fish PHP 160

A great Malay dish –fried fish with spicy chili sauce, perfect accompanied with steamed white rice.

 

 

Singapore BBQ Sting Ray PHP

When Bubba and I were in Donsol Sorsogon some years back, we wanted to order this in one of the restaurants there but they were out.  We missed to try this when we were in Singapore in March but it’s definitely good to know that it’s available at Nasi Lemak.

 

 

A bit on the spicy side but the soft delicate meat kind of melts in your tongue and you get a taste of its BBQ goodness.  Bubba and I will take a trip to Nasi Lemak one of these days so he can finally taste a stingray.

 

Crispy Baby Squid PHP

I tried this at Makansutra Glutton Bay in Singapore and this is as good as it gets here in Manila.  Crisp, almost brittle, semi-sweet, semi-spicy tiny squid that can whet any appetite

 

 

Ayam Panggang PHP

Java-style BBQ chicken that I can finish all by myself.  One of the things I look forward to having again in my next visit.  Squeeze a bit of lemon or calamansi to spruce up the flavor

 

 

Penang Char Kway Teow PHP 200

Their best-selling noodle dish with bean sprouts, sliced beef, and generous amount of sizeable shrimps

 

 

Fried Salted Squid PHP

The almost golden lightly battered squid had the right crunch and shade of saltiness

Exact blend of sweetness and a bit tangy flavor coats the pork cutlets

Nasi Lemak restaurant offers a dining space with muted tones, dark wooden tables with some red accented chairs, but it’s the delicious traditional fare that is the true shining star.  Diners can choose from an extensive line-up of excitingly spiced and non-spicy dishes that seal its authenticity.

Taste a contrast of flavors at Nasi Lemak and make sure you got a cold drink to go with it.

Fit Flop –Oprah Swears By It

 

 

Okay, if asked who is the most avid reader of Didi’s site, I know who to point to (Pointing ALL fingers to Bubba).  He sometimes goes, “did you read Didi’s blah blah…” and I will be totally clueless because he gets to read it first before I do.

 

One day, he started blabbing about this newest technology in flip flops –Fit Flop, that he read over Didi’s site.  He said it would really be good for my back since I have scoliosis and I always complain of back pains.  I said I don’t need the fit flops because nowadays you would always find me in sneakers anyway (even in the office, unless I have an important meeting with affiliates).  My white sneakers are pretty comfortable. 

 

He objects and says that Fit Flop is beneficial for this and that.  He goes on to drop the name of Oprah.  Oprah swears by it.  Right.

 

The next big question: how much is it?

 

 

 

When he answered that it was a whopping PHP 3K, I said immediately, “NO WAY JOSE!!!”  I am NOT going to buy flip flops that are that expensive.  It’s crazy!

 

I remember buying Havaianas some 5 years ago that are half as much and I have never used them.  It’s still in the box.  What do I need another pair of flip flops for?  I for one do not need an extra. 

 

 

Every time Bubba remembers Fit Flop, he keeps insisting that I get one.  He said he would buy it for me.  Even if he buys it for me, I don’t want IT.  It’s just a waste of hard earned money.

 

So the story goes, we were in Powerplant Mall last Saturday.  Bubba spots the Fit Flop stand and hauled me there.  I said I don’t want to try it on but he was so persistent.  Bubba got me try it on and it was pretty comfortable.  But I still wasn’t that sold.  Since he is really bent on buying me one, I let him be.  It’s for my “health” anyway.  It also supposedly helps you burn more calories as you walk on them.  Exercise while wearing flip flops?

 

 

The woman who turns everything she touches to gold backs it up.

 

Oprah swears by it.  And most importantly, so does Didi.

 

On June 22, 2009, I have officially joined the bandwagon of those in UK who are in this Fit Flop craze since 2007.  Thanks Bubba!

Lately, I am back to a shopping frenzy.

 

Surprisingly, it was me dragging Bubba to the mall instead of the other way around.  I don’t think I’ve had the shopping itch since three years back.

Actually, Bubba STILL takes longer to shop while I take 5 minutes to know I don’t like to fuss around their current line-up and jet out of the store.

Yoshi Ice Cream

The newest Ice Cream store in town is located at the 3rd level of Robinson’s Galleria, West Wing.  Yoshi (without the “noya”) presents a Japanese character on its logo.  Interestingly, they have a variety of ice cream blends, sprinkles and flavors.  The look and feel of the store is also fresh.  I was going to try it but I was turned off by the cupcake store next to it who had a rude staff.

Scooping price ranges from PHP 45-90.  The price is differed by the kind of ice cream: Special, Premium or Lite. Served in a cup, it’s 45, 50 or 60 respectively.  Served in a waffle cone, it’s 50, 55 or 65.  Double scoop is 75, 75 or 90.

They also offer frozen plate creations.  Shogun is at PHP 75 while Sumo costs 105, which is good for two.

Bubba’s Taters Treat

It was a regular after-work-hit-the-gym day.  It was going to be just me sweating it out in boxing or running at Red Corner.  Bubba was coming from a 7pm meeting at work so it was just the perfect timing to set out my plan.  Right after workout, I hurriedly ran from Crown Plaza to Tater’s at Robinson’s Galleria to order all the Tater’s grub that we can carry.

Like a Taters maniac, I chanted 2 big orders of their fried potato chips in nacho cheese flavor, one order of their munchers (which are nuggets of potato and other fillings) with sour cream, steak burger with cheese, and nachos with everything on it.

I also made a mad dash to Magoo’s to order pizza since it’s been a year since we last had Magoo’s pizza on biscuit dough.  I ran out of time in preparing everything before Bubba arrived.  I had to go back to the gym to prepare my gym bag and meet him there.  I asked the Taters guy if I can just get the food I ordered later and instructed him to place the placard among the yummy eats I bought.  He willingly obliged.

I sprinted back to Crowne Plaza (I had a better workout doing the errands going back and forth.  I shouldn’t have showered after gym after all) and met Bubba, huffing and puffing, like I just stepped out of the lockers.  All the sweat played into the role that I was at the gym this whole time.

We were right in time for the 10pm screening of 88 Minutes that stars Al Pacino.  He went to buy the tickets and I excused myself to sprint back to Magoo’s, which is all the way to the other wing of the mall.

Finally, all the food was laid on the table all for Bubba to see and enjoy during the movie.
