Target that evening was initially a music-themed game night at Nomama in Capitol Commons but Tuesday traffic was horrible so Nats and I detoured to find a good restaurant to have a quiet dinner in and catch-up.

I’ve visited Avi Bistro two weekends ago and Greeka Kouzina prior and saw that Hiyas was the only one I haven’t tried and made the suggestion to Nats. Hiyas has simple interiors that crosses modernity but has traditional sentiments. I love the use of space and mason jar droplights. There seems to be a reading area on the right with shelves of books displayed.

Fishball with Pinakurat – Complimentary
It is nice how there are restaurants who make your waiting time for your orders worthwhile. They serve you with complimentary warm bread and butter, or an amuse bouche, or a free aperitif, some as simple as peanuts or prawn crackers. It shows that overall experience to them is highly important.
Hiyas served chopped fish ball with “pinakurat” vinegar, which is Ilocos’ spiced fermented vinegar.
Creamy Kalabasa Soup P185
Both Nats and I were really hungry since it’s already 9pm, so decided to start with something warm. Hiyas’ pumpkin soup can serve two as a starter at its price. I particularly liked that the strength of the soup relies more on the pumpkin puree than cream.

Hiyas served their Chicken Inasal with sautéed eggplant, atchara and pinakurat.
Definitely, rice is deeply ingrained in Pinoy cuisine so I had to park my no-rice diet first and relished eating Hiyas’ plain rice (P30) and garlic rice (P45) to better enjoy the viands.
Hiyas Trio Adobo P325
This was a sampler plate of all the variants of adobo Hiyas can dish out. It includes Adobong Pusit sa Gata, Adobong Baboy sa Achuete, Tinuyo na Adobong Manok (spicy).

In order of favorites, Nats and I agree that the spicy adobong manok had really great flavors going for it and a lovely lining of heat. Our second favorite was the adobong pusit which was beautifully done as well where the squid was very tender and supple, jammed with flavors of the coconut cream and sautéed onions.
Hiyas Kare Kare P290 (Solo)
Stewed ox-tail, ox-tripe in rich peanut sauce and coconut milk
The Hiyas Kare Kare also satisfied immensely and had me eating spoonfuls of rice with the nutty creamy sauce battling with the saltiness of the shrimp paste. It had enough ox tripe to not leave me wanting and meat and fat on the ox tail to get my meaty desires gratified.
My not so trusty iPhone took the photos but I wish I was able to bring my camera for better aesthetic appreciation of the dishes and presentation.
Interested to try Boneless Adidas (P185), Manok sa Bawang (P250), Sinampalukang Manok (P195) since it’s been raining and Suahe Sisig sa Aligue (P240). Hiyas carries with them a degree of finesse and talent in the execution of the Modern Filipino dishes.
