Heart, Meat and Soul by Francis Fabie

This is long overdue and been burning a hole in my backlog since it has been a few months since Francis Fabie invited us over at his house.  I think though that this news is still as hot as freshly baked cookies off the oven given that it’s ideal for Christmas and New Year get-togethers, where people are just too busy to cook at home.  Restaurants can just be too impersonal crawling with the Christmas crowd.    

 

Chef Francis owns Heart, Meat and Soul business venture, whose main thrust is home-cooked meals right at the comfort of your home.  It is similar to a catering service but instead of a full set-up that can be quite cumbersome, Chef Francis uses your kitchen to prepare his comfort specialties.  

Basically, the idea is like a chef-for-hire but without the exuberant price.  If you don’t want Chef Francis prowling your dirty kitchen, you can also just call in special bulk orders from Heart, Meat and Soul.

 

On the Table

Hearty, Meaty Spaghetti PHP 1,499 / 12 servings

The hearty, meaty spaghetti is Francis’ version of a Bolognese using spaghetti pasta.  The pasta dish is generously topped with ground meat that was stewed in tomato sauce and grated cheese.  It’s creamy, tangy and beefy that reminds of spaghetti that comforted us when we were kids but adults still continue to look for and enjoy up to this date.

 

Soulful, Tender Roast Chicken PHP 799 / whole chicken with rice

This smells wonderful and the aroma can get your tummy grumbling.  If you want tender roasted chicken on the slightly soy-salty side, Heart, Meat and Soul’s take on the roasted chicken is right up your alley.  The chicken meat is cooked through but is not rubbery.  It’s exceptionally tender and with flavor soaking through the skin unto the meat.  It can get you eating heaps of steamed white rice just to mellow down the flavor.

 

Hearty, Creamy Mashed Potato PHP 379 / 8 servings

Mashed potato is smooth and topped with roughly chopped parsley leaves.  I prefer my mashed potato rustic and chunky but this works too on the palate and a good combination for the tender roast chicken. 

 

If you want the comfort taste of home-cooked meals elevated a notch and don’t want the trouble of grocery shopping during the holidays and cleaning up a dirty kitchen, it’s best to start calling in orders of Heart, Meat and Soul specialties.
